Paleo Sweet Potato Waffles
Ingredients
- 1/3 cup sweet potato purée
- 2 eggs
- 2 tbsp nut milk (add more if the batter is too thick)
- 2 tbsp coconut oil
- 1/3 cup almond flour
- 1/3 cup tapioca flour
- 1/2 tsp cinnamon
- a pinch of salt
- 1 tsp baking soda
Toppings
- Banana
- Cacao nibs
- Almond butter
- Maple syrup
Preparation
Steam the sweet potato until soft, then purée it
In a mixing bowl, combine almond flour, tapioca flour, cinnamon, salt, and baking soda
In another bowl, whisk together sweet potato purée, eggs, nut milk, and coconut oil
Add the wet ingredients to the dry ingredients and mix until well combined; add more nut milk if the batter is too thick
Preheat the waffle iron according to manufacturer's instructions
Pour the batter into the waffle iron and cook until golden and crispy on the outside, fluffy on the inside
Serve with toppings: banana, cacao nibs, almond butter, and maple syrup
