Paleo Sweet Potato Waffle
Ingredients
- 1/3 cup sweet potato purée
- 2 eggs
- 1/4 cup nut milk
- 2 tablespoons coconut oil
- 1/3 cup almond flour
- 1/3 cup tapioca flour
- 1/2 teaspoon cinnamon
- Pinch of salt
- 1 teaspoon baking soda
Toppings
- Banana
- Blueberries
- Cacao nibs
- Almond butter
- Maple syrup
Preparation
Prepare sweet potato purée by steaming or baking the sweet potato and mashing it until smooth
In a mixing bowl, combine the sweet potato purée, eggs, nut milk, and coconut oil
In a separate bowl, mix together the almond flour, tapioca flour, cinnamon, salt, and baking soda
Add the dry ingredients to the wet ingredients and stir until well combined. If the batter is too thick, add more nut milk
Preheat the waffle iron according to the manufacturer's instructions
Pour the batter into the preheated waffle iron and cook until golden brown, crispy on the outside, and fluffy on the inside
Serve the waffle with desired toppings such as banana, blueberries, cacao nibs, almond butter, and maple syrup
