Paleo Sweet Potato Waffles
Ingredients
- 1/3 cup sweet potato purée
- 2 eggs
- 1/4 cup nut milk
- 2 tbsp coconut oil
- 1/2 cup almond flour
- 1/4 cup tapioca flour (optional)
- 1/2 tsp cinnamon and a pinch of salt
- 1 tsp baking soda
Toppings
- Banana
- Cacao nibs
- Almond butter
- Plant-based yogurt
- Mashed raspberry
- Pollen
- Granola
- Maple syrup
Preparation
Mix dry ingredients together in a bowl
Mix wet ingredients together in another bowl
Combine wet and dry mixtures to form a batter, adding more nut milk if needed for consistency
Preheat waffle iron to medium-high heat
Pour batter into waffle iron and cook until golden and crisp, about 3-5 minutes
Assembly
Top cooked waffles with banana, cacao nibs, almond butter, plant-based yogurt, mashed raspberry, pollen, granola, and maple syrup to taste
