Paleo Sweet Potato Waffles

Ingredients

  • 1/3 cup sweet potato purée
  • 2 eggs
  • 1/4 cup nut milk
  • 2 tbsp coconut oil
  • 1/2 cup almond flour
  • 1/4 cup tapioca flour (optional)
  • 1/2 tsp cinnamon and a pinch of salt
  • 1 tsp baking soda

Toppings

  • Banana
  • Cacao nibs
  • Almond butter
  • Plant-based yogurt
  • Mashed raspberry
  • Pollen
  • Granola
  • Maple syrup

Preparation

  1. Mix dry ingredients together in a bowl

  2. Mix wet ingredients together in another bowl

  3. Combine wet and dry mixtures to form a batter, adding more nut milk if needed for consistency

  4. Preheat waffle iron to medium-high heat

  5. Pour batter into waffle iron and cook until golden and crisp, about 3-5 minutes

Assembly

  1. Top cooked waffles with banana, cacao nibs, almond butter, plant-based yogurt, mashed raspberry, pollen, granola, and maple syrup to taste
