Paleo Blueberry Sweet Potato Waffle

Ingredients

  • 1/3 cup sweet potato purée
  • 2 eggs
  • 1/3 cup almond flour
  • 1/3 cup tapioca flour
  • 2 tbsp coconut oil
  • 1-2 tbsp nut milk
  • A lot of fresh or frozen blueberries
  • 2 tsp vanilla extract
  • 1 tsp baking soda

Toppings

  • Banana
  • Granola
  • Pecans
  • Almond butter
  • Maple syrup

Preparation

  1. Mix dry ingredients: almond flour, tapioca flour, and baking soda together in a bowl.

  2. In a separate bowl, whisk wet ingredients: sweet potato purée, eggs, coconut oil, nut milk, and vanilla extract.

  3. Combine wet and dry mixtures until smooth.

  4. Gently fold in blueberries.

  5. Preheat waffle iron and lightly grease it.

  6. Pour batter onto the waffle iron and cook until golden and crispy.

  7. Serve with toppings as desired.
