Paleo Sweet Potato Waffle

Ingredients

  • 1/3 cup sweet potato purée
  • 2 eggs
  • 2 tbsp nut milk
  • 2 tbsp coconut oil
  • 1/2 cup almond flour
  • 1/3 cup tapioca flour
  • 1/2 tsp cinnamon + pinch of salt
  • 1 tsp baking soda

Toppings

  • Banana
  • Cacao nibs
  • Granola
  • Yogurt of choice
  • Blackberry
  • Almond butter
  • Maple syrup

Preparation

  1. Mix all ingredients together in a bowl to form a smooth batter

  2. Adjust batter consistency with additional nut milk if it is too thick

  3. Preheat a waffle iron and cook the batter until golden, crispy on the outside, and fluffy on the inside

  4. For pancakes, heat a griddle or pan and cook the batter until bubbles form and edges are set, then flip and cook until done

Serving

  1. Add desired toppings such as banana, cacao nibs, granola, yogurt, blackberry, almond butter, and maple syrup.
