Sweet Potato Waffle with Caramelized Bananas

Ingredients

  • 1/3 cup sweet potato purée
  • 2 eggs
  • 1/4 cup nut milk (add more if batter is too thick)
  • 2 tbsp coconut oil
  • 1/3 cup almond flour
  • 1/3 cup tapioca flour
  • 1/2 tsp cinnamon + pinch of salt
  • 1 tsp baking soda

Toppings

  • Caramelized banana
  • Berries
  • Granola
  • Almond butter
  • Maple syrup

Preparation

Waffle

  1. Mix wet ingredients including sweet potato purée, eggs, nut milk, and coconut oil in a bowl

  2. Combine dry ingredients such as almond flour, tapioca flour, cinnamon, salt, and baking soda in another bowl

  3. Add dry mixture to wet mixture and stir until well combined to form batter

  4. Preheat waffle iron and cook batter until golden and crispy

Toppings

  1. Slice bananas and cook in a pan with butter and sugar over medium heat until caramelized and golden

  2. Assemble by adding caramelized bananas, berries, granola, almond butter, and maple syrup on top of the waffle
