Simple Vanilla Banana Pancakes

Ingredients

  • 2 eggs
  • 1 banana
  • 1 tablespoon vanilla collagen
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • coconut oil
  • maple syrup

Preparation

  1. Heat a skillet over medium heat.

  2. In a bowl, whisk 2 eggs and mash 1 banana, leaving it a little chunky.

  3. Add 1 tablespoon vanilla collagen, 1 teaspoon cinnamon, and 1/2 teaspoon baking powder to the bowl.

  4. Mix all ingredients together.

  5. Add a little coconut oil to the pan.

  6. Spoon the pancake batter into the pan to form mini pancakes.

  7. Cook for 2-3 minutes on each side.

  8. Sauté 1/2 banana in the leftover coconut oil with cinnamon.

  9. Serve topped with the sautéed banana and a drizzle of maple syrup.
