Simple Vanilla Banana Pancakes
Ingredients
- 2 eggs
- 1 banana
- 1 tablespoon vanilla collagen
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- coconut oil
- maple syrup
Preparation
Heat a skillet over medium heat.
In a bowl, whisk 2 eggs and mash 1 banana, leaving it a little chunky.
Add 1 tablespoon vanilla collagen, 1 teaspoon cinnamon, and 1/2 teaspoon baking powder to the bowl.
Mix all ingredients together.
Add a little coconut oil to the pan.
Spoon the pancake batter into the pan to form mini pancakes.
Cook for 2-3 minutes on each side.
Sauté 1/2 banana in the leftover coconut oil with cinnamon.
Serve topped with the sautéed banana and a drizzle of maple syrup.
