Grain-Free Blood Sugar Balancing Muffins

Ingredients

Wet mix

  • 1 banana
  • 1/4 heaped cup of solid coconut oil (then melted)
  • a couple of drops of monk fruit sweetener or a small spoonful of honey, maple syrup or stevia
  • 2 eggs

Dry mix

  • 1.5 cups of almond flour
  • 1/2 tsp of baking powder
  • 2 tbsp of cacao powder
  • salt
  • a small handful of 100% chocolate chunks

Preparation

  1. Preheat oven to 180 degrees.

  2. Mash the banana and combine with all wet ingredients in a bowl; mix well.

  3. Add all dry ingredients and mix until combined.

  4. Spoon the mixture into muffin cases.

  5. Bake for 25 minutes.
