Fluffy Lemon Cake
Ingredients
- 1+1/2 cup almond flour
- 4 eggs (room temperature)
- 2 tbsp lemon zest
- 1 tsp baking powder
- 1 tsp vinegar
- 1 tsp baking powder
- pinch of salt
Preparation
Separate the egg yolks from their egg whites and mix the egg yolks + lemon zest +1/4 cup stevia/sugar by hand
Mix all this in one bowl
In another bowl whisk the flour and baking powder, then add this to the bowl from the previous step
The mixture should look thick
In another bowl beat the egg whites with an electric mixer until peaks form
Add the vinegar and the remaining 1/4 cup of stevia/sugar
Fold the egg whites into the almond flour mixture slowly until everything is well mixed
Transfer the batter into a round pan and pop in the oven for 30 minutes at 175c
DO NOT ❗open the oven as soon as it’s done to avoid the cake from flatenning, wait for at least 3 extra minutes
