Marbled Banana Bread

Ingredients

  • 3 large ripe bananas
  • 3 eggs (can sub chia eggs)
  • 2 cups almond flour
  • 1/4 cup coconut sugar
  • 1 tbs baking powder
  • 1 tsp vanilla
  • 3/4 tsp cinnamon
  • dash of nutmeg
  • 1/4 tsp salt
  • 1/4 cup cocoa powder

Preparation

  1. Preheat you oven to 350ºF

  2. In a large mixing bowl, mash your bananas

  3. Add in eggs + vanilla and mix

  4. In a separate bowl, combine almond flour, sugar, baking powder, cinnamon, salt and mix well

  5. Add the dry mixture into the wet until well combined but don't over mix

  6. Pour half the batter into a separate bowl and mix in your cocoa powder for the chocolate swirl

  7. Line a loaf pan with parchment paper and layer your chocolate later with your regular banana bread batter

  8. Layer about 2 scoops of each and keep alternating until you have no batter remains

  9. Take a butter knife and swirl your batter to create the marble effect and top with a handful of chocolate chips

  10. Bake in the oven for ~45 mins or until a toothpick comes out clean

  11. Remove loaf from the pan and allow it to cool before slicing into it

  12. Lasts 3-5 days when stored in an airtight container
