Almond, Yogurt, and Coconut Mini Pound Cake
Ingredients
- 1 cup almond flour
- 1/2 cup greek yogurt
- 2 eggs
- 1/4 cup stevia or sweetener
- 1 tsp baking powder
Optional toppings
- Coconut flakes
Preparation
Mix the almond flour and baking powder in a bowl.
In a separate bowl, mix the stevia, eggs, and yogurt.
Combine both mixtures and stir well until smooth.
Transfer the batter to a small pound cake mold and bake for 30 minutes at 180°C.
Optionally, sprinkle coconut flakes on top.
