Almond, Yogurt, and Coconut Mini Pound Cake

Ingredients

  • 1 cup almond flour
  • 1/2 cup greek yogurt
  • 2 eggs
  • 1/4 cup stevia or sweetener
  • 1 tsp baking powder

Optional toppings

  • Coconut flakes

Preparation

  1. Mix the almond flour and baking powder in a bowl.

  2. In a separate bowl, mix the stevia, eggs, and yogurt.

  3. Combine both mixtures and stir well until smooth.

  4. Transfer the batter to a small pound cake mold and bake for 30 minutes at 180°C.

  5. Optionally, sprinkle coconut flakes on top.
