Mini Buckwheat and Almond Flour Pound Cakes

Ingredients

  • 3/4 cup buckwheat flour
  • 1/2 cup almond meal
  • 1/2 cup rice flour
  • 2 eggs
  • 2 ripe bananas
  • 1/4 cup veggie milk
  • 1 tsp coconut oil
  • 3 tsps stevia
  • 1 tsp baking powder

Preparation

  1. Mix all dry ingredients first.

  2. In a separate bowl, mash the bananas and eggs.

  3. Combine both mixtures well until there are no lumps.

  4. Transfer the mixture into mini pound cake or muffin molds.

  5. Bake for 30 minutes at 185°C
