Homemade Coconut and Raspberry Muffins

Ingredients

Wet

  • 1 cup coconut milk (shake the can really well before opening)
  • 2 eggs
  • 3/4 cup maple syrup
  • 1 tsp vanilla
  • 1/2 cup coconut oil (just melted)

Dry mix

  • 1 cup rolled oats
  • 2 cups self raising flour
  • 1 1/2 tsp baking powder
  • 1 cup unsweetened desiccated coconut
  • 1/4 tsp salt
  • 1 cup fresh raspberries

Preparation

  1. Preheat oven to 175C

  2. Whisk together all the wet ingredients till thoroughly combined and set aside

  3. Put the oats and desiccated coconut in a large bowl

  4. Put a fine sieve on top of the bowl with the oat mix and sieve in the flour, baking powder and salt

  5. Pour in the wet ingredient mix

  6. Using a spatula, mix till just combined. Don’t overmix

  7. Gently fold in the raspberries

  8. Bake for 25 - 30 minutes till an inserted knife comes out clean. Enjoy
