Vegan Chocolate Chip Cookies

Ingredients

  • 1 heaped tbs maple syrup
  • 2 tbs coconut oil
  • 1/2 tbs tahini/nut butter
  • 2.5 tbs applesauce/mashed banana
  • 1/2 tsp vanilla
  • 2 tbs cake flour (or sweet rice flour)
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • pinch salt
  • 1/2 cup vegan chocolate chunks

Preparation

  1. Preheat your oven to 160 degrees Celsius and line a cookie tray with parchment paper. Mix together your sugar, maple syrup, coconut oil, nut butter, applesauce and vanilla until a sticky paste is formed

  2. Sift in your dry ingredients and mix to combine; fold in the chocolate chunks last. Portion out into cookie dough balls, flattening slightly - they will spread a little as they bake

  3. Bake for 13-15 minutes, or less if you prefer gooier, stodgy half-baked goodness. Enjoy
