Vegan Chocolate Chip Cookies
Ingredients
- 1 heaped tbs maple syrup
- 2 tbs coconut oil
- 1/2 tbs tahini/nut butter
- 2.5 tbs applesauce/mashed banana
- 1/2 tsp vanilla
- 2 tbs cake flour (or sweet rice flour)
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- pinch salt
- 1/2 cup vegan chocolate chunks
Preparation
Preheat your oven to 160 degrees Celsius and line a cookie tray with parchment paper. Mix together your sugar, maple syrup, coconut oil, nut butter, applesauce and vanilla until a sticky paste is formed
Sift in your dry ingredients and mix to combine; fold in the chocolate chunks last. Portion out into cookie dough balls, flattening slightly - they will spread a little as they bake
Bake for 13-15 minutes, or less if you prefer gooier, stodgy half-baked goodness. Enjoy
