Dalgona Chip Ice Cream Cookies

Ingredients

  • 1 tbsp coconut oil melted (15 g)
  • 2 tbsp nut/seed butter (32 g)
  • 3 tbsp maple syrup (63 g)
  • 2 tbsp nut milk (30 g)
  • 2 tbsp instant coffee granules (12 g)
  • 1/2 cup flour, gf ok (60 g)
  • 1/2 tsp baking powder
  • Pinch salt
  • 1/2 tsp vanilla
  • 3 tbsp chocolate chips (45 g)
  • 1 cup ice cream (240 g)

Preparation

  1. Preheat oven to 350F and line a cookie sheet with parchment.

  2. Mix oil, almond butter, syrup, coffee, vanilla.

  3. Whisk together flour, baking powder, salt.

  4. Combine the two with a spatula, add chocolate chips.

  5. Refrigerate 5-10 mins or skip.

  6. Scoop cookies, flatten if necessary.

  7. Bake 10 mins, cool completely.

  8. Get ice cream out to soften 5 mins.

  9. Make 8 sandwiches with 2 tbsp ice cream and keep frozen.
