Dalgona Chip Ice Cream Cookies
Ingredients
- 1 tbsp coconut oil melted (15 g)
- 2 tbsp nut/seed butter (32 g)
- 3 tbsp maple syrup (63 g)
- 2 tbsp nut milk (30 g)
- 2 tbsp instant coffee granules (12 g)
- 1/2 cup flour, gf ok (60 g)
- 1/2 tsp baking powder
- Pinch salt
- 1/2 tsp vanilla
- 3 tbsp chocolate chips (45 g)
- 1 cup ice cream (240 g)
Preparation
Preheat oven to 350F and line a cookie sheet with parchment.
Mix oil, almond butter, syrup, coffee, vanilla.
Whisk together flour, baking powder, salt.
Combine the two with a spatula, add chocolate chips.
Refrigerate 5-10 mins or skip.
Scoop cookies, flatten if necessary.
Bake 10 mins, cool completely.
Get ice cream out to soften 5 mins.
Make 8 sandwiches with 2 tbsp ice cream and keep frozen.
