Best Ever Fudgey Vegan Healthy Brownies

Ingredients

  • 3/4 cup flour (plain, spelt, or oat)
  • heaping 1/2 cup sweetener (erythritol, xylitol, or sugar of choice)
  • 1/3 cup cocoa or cacao powder
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • dash of cinnamon
  • 1/2 tsp salt
  • 1 cup applesauce
  • 1 tsp vanilla
  • heaping 1/4 cup dark chocolate chips (or more)
  • 1/3 cup walnuts, chopped (or other nuts)

Preparation

  1. Preheat your oven to fan 160°C.

  2. Mix the dry ingredients, then whisk in the wet ingredients.

  3. Fold in the chocolate chips and walnuts.

  4. Pour into a silicone loaf tin and bake for 30-40 minutes. They may not look cooked but will set as they cool. Alternatively, use a brownie tin and bake for 25-30 minutes.

  5. Serve warm with ice cream if desired.
