Banana Walnut Muffins with Caramelized Banana
Ingredients
- 2 cups of Flour
- 3/4 cup sugar plus 2 tsp
- 2 tsp of Baking Powder
- 1 tsp of Baking Soda
- 1/4 tsp of Salt
- 4 Ripe Bananas
- 1/3 cup plus 2 tsp @miyokoscreamery Vegan Butter
- 1/2 cup Vegan Sour Cream
- 1/2 cup Plant Milk
- 2 tsp of Vanilla
Optional
- 1/3 cup chopped Walnuts
Preparation
Preheat the oven to 400°F
In a pan, melt the 2 tsp of Vegan Butter. Add one Banana that has been cut into slices. Sprinkle the slices with 2 tsp of Sugar and let cook on medium heat for about 3-4 minutes or until browned and caramelized. Flip and repeat. Set aside.
In a large bowl, add and combine all the dry ingredients.
Mash 3 Bananas and add them to the Sour Cream, Milk, Vanilla and 1/3 cup melted Butter.
Combine the wet ingredients with the dry ingredients and mix until well combined.
Add in the chopped Walnuts and mix through.
Pour the batter into a lined muffin pan(s) filling each about 2/3 the way full. Top with a couple of the caramelized Banana slices and bake at 400 for 22 minutes or until an inserted toothpick comes out clean.
