Vegan Chocolate Fudge Cookies

Ingredients

  • 50 g rice flour
  • 0.5 tsp baking powder
  • 1/4 tsp salt
  • 15 g cocoa powder
  • 2 flax eggs (2 tbsp ground flax seeds + 2 tbsp water)
  • 0.25 cup tahini
  • 0.5 cup maple syrup
  • 40g chocolate chips

Preparation

  1. Preheat the oven to 200 degrees Celsius. Start with making the flax egg. Combine the ground flax seeds with the water and leave it to rest for 10 minutes or until thick.

  2. Whip up the dry ingredients in a bowl. Add the tahini, flax egg and maple syrup and combine.

  3. Add the chocolate chips and combine again.

  4. Pour the dough with a spoon on a baking tray with baking paper. It should make 4 to 5 medium sized cookies. The dough should be sticky.

  5. Bake in the oven for 10 to 12 minutes.
