Vegan Chocolate Chip Oatmeal Cookies

Ingredients

  • 2 flax eggs (2 tbsp ground flax seeds + 5 tbsp water)
  • 2 cups oat flour (blend rolled oats into flour— 2 cups MINUS 2 tbsp oats)
  • 1 cup whole rolled oats
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2/3 cup almond butter
  • 1/3 cup melted coconut oil
  • 1/4 cup maple syrup + a couple tbsp sugar to taste for more sweetness
  • 2 tbsp almond milk
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips

Preparation

  1. Preheat oven to 350 degrees.

  2. Make the flax eggs and let them sit for 5 minutes.

  3. Whisk together the oats, oat flour, baking powder, baking soda, and a pinch of salt.

  4. Mix in the almond butter, oil, syrup or sugar, and vanilla. Add milk if the dough is too thick and crumbly.

  5. Fold in the chocolate chips.

  6. Shape into 12 cookies.

  7. Bake for 16-17 minutes and enjoy.
