Chocolate Chickpea Blondies ?
Ingredients
- 1 can chickpeas drained & rinsed
- 1/3 cup almond butter
- 1/4 cup maple syrup
- 1/2 cup brown sugar
- 5 tbsp oat flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- pinch of salt
Preparation
Preheat oven to 350° & grease a square pan w coconut oil
Pulse oats in a food processor to make a flour, then add in the rest of the batter ingredients (sans chocolate) & process until smooth
Fold in the chocolate chips, pour into the greased pan & then bake for 25-30 mins
Be careful to not overbake— I left mine in the oven 2 mins over & they came out a tad bit drier vs
Gooey
Let cool for 25 mins, then slice, serve & devour
