Chocolate Chickpea Blondies ?

Ingredients

  • 1 can chickpeas drained & rinsed
  • 1/3 cup almond butter
  • 1/4 cup maple syrup
  • 1/2 cup brown sugar
  • 5 tbsp oat flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch of salt

Preparation

  1. Preheat oven to 350° & grease a square pan w coconut oil

  2. Pulse oats in a food processor to make a flour, then add in the rest of the batter ingredients (sans chocolate) & process until smooth

  3. Fold in the chocolate chips, pour into the greased pan & then bake for 25-30 mins

  4. Be careful to not overbake— I left mine in the oven 2 mins over & they came out a tad bit drier vs

  5. Gooey

  6. Let cool for 25 mins, then slice, serve & devour
