Salted Caramel Banana Crumble Muffins

Ingredients

Muffins

  • 3 Bananas
  • 1/4 Granulated Sweetener
  • 1/3 cup Coconut Oil (melted)
  • 1 Flax Egg
  • 1 tsp Vanilla
  • 1/2 tsp Salt
  • 1 cup Self Raising Flour
  • 1 scoop Vanilla Protein Powder
  • 1 Purabon Salted Caramel Protein Ball

Crumble

  • 1 Purabon Salted Caramel Protein Ball
  • 3 tbs Rolled Oats
  • 1 tbs Coconut Oil (melted)

Preparation

  1. Preheat oven to 180°C

  2. Add bananas to a bowl and mash. Add sweetener, coconut oil and flax egg. Stir until combined.

  3. Add vanilla, salt and flour. Stir until combined.

  4. Crumble up protein ball and stir in to the mix.

  5. Make the crumble by mixing together protein ball, oats and coconut oil.

  6. Pour mixture into muffin cases or tins and bake for 25 minutes or until cooked through. Add the crumble on top after about 10 minutes into baking.

  7. Leave to cool and store in an airtight container in a cupboard for 3-4 days or the fridge for a week.
