Chocolate Aubergine Brownies
Ingredients
- 150g dark chocolate (70% min)
- 60g coconut oil
- 60g soft dates, pitted and chopped
- 50ml maple syrup
- 3 eggs, beaten
- 1 tsp baking powder
- 75g ground almonds
- 1 aubergine
- peeled and diced
Preparation
Preheat the oven to 170C/150C fan
Place the aubergine in a microwaveable bowl, cover and cook for 5 mins or so until softened
Whilst still hot, stir in the chocolate and coconut oil until melted
Add the dates and maple syrup and blitz in a blender until smooth
Allow to cool slightly, then stir in the eggs, baking powder and ground almonds, and blitz again
Line a baking tray with greaseproof paper and bake for 20 mins or so, until a knife comes out clean
Slice into 16 squares once cool
