Chocolate Aubergine Brownies

Ingredients

  • 150g dark chocolate (70% min)
  • 60g coconut oil
  • 60g soft dates, pitted and chopped
  • 50ml maple syrup
  • 3 eggs, beaten
  • 1 tsp baking powder
  • 75g ground almonds
  • 1 aubergine
  • peeled and diced

Preparation

  1. Preheat the oven to 170C/150C fan

  2. Place the aubergine in a microwaveable bowl, cover and cook for 5 mins or so until softened

  3. Whilst still hot, stir in the chocolate and coconut oil until melted

  4. Add the dates and maple syrup and blitz in a blender until smooth

  5. Allow to cool slightly, then stir in the eggs, baking powder and ground almonds, and blitz again

  6. Line a baking tray with greaseproof paper and bake for 20 mins or so, until a knife comes out clean

  7. Slice into 16 squares once cool
