Dark Chocolate Almond Cookie Skillet

Ingredients

  • 2 eggs
  • 20g (1/4 cup) coconut oil (melted and cooled)
  • 3 tbsp maple syrup @myproteinuk
  • 50g (1/4 cup) almond butter @myproteinuk
  • 45g (1/2 cup) ground almonds/ almond flour
  • 1/4 cup sugar (i used @natvia_uk zero calorie sugar)
  • tsp baking powder
  • dark chocolate cut into chunks

Preparation

  1. Preheat the oven to 180oc and cover your skillet pan in baking paper or grease with butter/ oil

  2. Combine all the wet ingredients in one bowl and set aside

  3. Combine all the dry ingredients in another bowl

  4. Add the dry ingredients to the wet and mix until combined

  5. Pour the mixture into your skillet and top with the chunks of chocolate

  6. Place in the oven for around 18 minutes until golden on top but still slightly springy to touch

  7. Leave to cool before slicing into pieces

  8. Great served with ice cream or yoghurt
