Caramelised Pecan and Chocolate Chip Banana Bread
Ingredients
- 3 large very ripe bananas
- 100g caster sugar
- 80ml coconut oil, melted
- 150g flour
- 50 grams of ground almonds (or sub more flour)
- 100g dark chocolate chopped into big chunks
- 1 flax egg
- 1 tsp baking soda
- 1 tsp baking powder
- 50g caramelised pecans roughly chopped
- to caramelise the pecans:50g pecans, 1 1/2 tbsp maple syrup)
Preparation
Preheat the oven to 190c
Begin by caramelising the pecans, toss them in maple syrup and then pop in the oven for 10 minutes keeping an eye they dont burn
Once ready, pop in the fridge to cool
In a large mixing bowl, add bananas and mash them
Then add sugar and coconut oil, give a good mix
Add in the flax egg and mix some more and then add in the chocolate and pecans
Combine dry ingredients and gently stir into wet mixture
Line a loaf tin with parchment and pour in the mixture, flatten the top and bake in the oven for 45-50 mins until just cooked!
