Banana Chocolate Chip Bread

Ingredients

  • 400 grams ripe bananas
  • 300 grams of quinoa or oat flour
  • 100 grams of coconut sugar
  • 250 grams of plant-based milk
  • 25 grams milled chia seeds(or linseeds)
  • 1 1/2 tsp of baking soda
  • 2 tbsp of apple cider vinegar
  • 60 grams of dark chocolate

Preparation

  1. Combine chia seeds with 1/3 of plant-based milk and stir well, leave to thicken

  2. Roughly mash bananas in a bowl, add quinoa flour and the rest of the plant-based milk

  3. Give it a good stir

  4. Add your thickened chia, coconut sugar, baking soda, and apple cider vinegar to the bowl and mix till everything is evenly incorporated

  5. Chop your chocolate and add to the dough

  6. Give it a final stir and bake in preheated to 180 degrees oven for 35-45 minutes or till a toothpick inserted in the middle comes out clean
