Sea Salt Peanut Chocolate Banana Bread
Ingredients
- 2 very ripe bananas (about 150g)
- 120g wholegrain spelt flour
- 80g sugar
- 1/2 tsp bicarbonate of soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- 2 tbsp almond milk
- 1.5 tbsp coconut oil
- 1 tbsp peanut butter
- Sea salt
- 70g dark chocolate
Preparation
Melt coconut oil over a low heat. Add peanut butter and leave to cool a little.
Mash the bananas in a large bowl.
Whisk sugar, flour, baking powder, bicarbonate, a large pinch of sea salt and cinnamon in a separate bowl. Add to the mashed bananas.
Add almond milk, coconut oil mixture, vanilla. Fold through chocolate chips.
Sprinkle with sea salt and a chopped banana if you like.
Bake in small loaf tin in a preheated oven at 180°C for about 30 minutes until the top is set but it is still gooey inside. Leave to cool inside the tin.
Top with yoghurt and more peanut butter. Enjoy warm!
