Double Chocolate Almond Flour Cookies

Ingredients

  • 2 cups almond flour
  • 1 cup chocolate chips, divided
  • 1/2 teaspoon baking soda
  • 4 Tablespoons sugar
  • 1/4 teaspoon sea salt
  • 3 Tablespoons melted coconut oil
  • 2 teaspoons baking powder
  • 2 Tablespoon almond milk
  • 1 teaspoon vanilla extract

Preparation

  1. Preheat oven to 375 degrees. Line a baking sheet with parchment paper.

  2. In a medium mixing bowl stir together almond flour, baking soda, sugar and sea salt.

  3. In a small bowl, add 1/2 cup chocolate chips, baking powder, almond milk and vanilla extract.

  4. Warm coconut oil to melt in a small saucepan or in the microwave, and pour over wet ingredients.

  5. Stir well as the heat from the warmed coconut oil melts the chocolate chips and they form a chocolate blend.

  6. Add chocolate blend to dry ingredients. Whisk until well combined.

  7. Scoop rounded tablespoons of batter onto prepared baking sheet. Press remaining 1/2 cup chocolate chips into cookie dough, flattening lightly.

  8. Bake 8-10 minutes. Bottoms will not be brown, but they are done! Cool and enjoy.
