Double Chocolate Almond Flour Cookies
Ingredients
- 2 cups almond flour
- 1 cup chocolate chips, divided
- 1/2 teaspoon baking soda
- 4 Tablespoons sugar
- 1/4 teaspoon sea salt
- 3 Tablespoons melted coconut oil
- 2 teaspoons baking powder
- 2 Tablespoon almond milk
- 1 teaspoon vanilla extract
Preparation
Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
In a medium mixing bowl stir together almond flour, baking soda, sugar and sea salt.
In a small bowl, add 1/2 cup chocolate chips, baking powder, almond milk and vanilla extract.
Warm coconut oil to melt in a small saucepan or in the microwave, and pour over wet ingredients.
Stir well as the heat from the warmed coconut oil melts the chocolate chips and they form a chocolate blend.
Add chocolate blend to dry ingredients. Whisk until well combined.
Scoop rounded tablespoons of batter onto prepared baking sheet. Press remaining 1/2 cup chocolate chips into cookie dough, flattening lightly.
Bake 8-10 minutes. Bottoms will not be brown, but they are done! Cool and enjoy.
