Chocolate Banana Bread
Ingredients
- 3 medium or 2 large ripe bananas (about 280g without skin)
- 120ml (1/2 cup) plant milk
- 60ml (1/4 cup) melted coconut oil
- 60ml (1/4 cup) maple or agave syrup
- 1 tsp vanilla extract
- 1 tbsp apple cider vinegar
- 200g (2 cups) wholemeal spelt flour
- 30g (3 tbsp) raw cacao powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- pinch of sea salt
- a large handful of chocolate chips
Preparation
In a large mixing bowl, mash the bananas with a fork
Add plant milk, coconut oil, maple syrup, vanilla and apple cider vinegar
Mix to combine
Add flour, cacao powder, baking soda, baking powder, cinnamon and salt
Mix until well combined, but don't overmix
Transfer to a lined loaf pan and decorate with chocolate chips
Bake at 180C for 35 minutes
Let cool to room temperature before slicing
