Chocolate Chip Zucchini Bread

Ingredients

  • 2 tbsp ground flaxseed
  • 4 tbsp water
  • 1 cup unsweetened applesauce
  • 1 cup grated zucchini
  • 1/4 cup natural peanut butter
  • 1 tbsp apple cider vinegar
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 2 cups spelt flour or white whole wheat flour
  • 1/2 tsp salt
  • 1/2 cup dairy free dark chocolate chips

Preparation

  1. Preheat oven to 350F

  2. In a medium sized mixing bowl combine ground flaxseed and water, stir and let sit for 5 minutes

  3. Once flax seeds gel up, add apple sauce and grated zucchini and with a fork or whisk mix together evenly

  4. Add in peanut butter, apple cider vinegar, cinnamon, and brown sugar and mix well into the zucchini mixture

  5. Stir in baking soda and baking powder and whisk together to evenly combine

  6. You will notice the batter bubble and rise

  7. Fold in salt and flour 1/2 cup at a time and mix into batter

  8. Repeat until all of the flour is incorporated

  9. Add chocolate chips then fold them into the batter

  10. Batter will be thick, spoon batter into a lightly greased loaf pan and place in the oven

  11. Bake in the over for 50-55 minutes, making sure a toothpick comes out clean before removing from the oven

  12. Make sure to allow bread to cool for a few minutes before cutting into it
