Double Chocolate Vegan Brownies

Ingredients

  • 2 tablespoons ground flax seed (+ 5 tablespoons water for flax egg)
  • 1/2 cup coconut sugar
  • 1/4 cup coconut oil
  • 1/4 cup unsweetened apple sauce
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 3/4 cup cacao powder
  • 1 cup almond flour
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon baking soda
  • 1/2 vegan chocolate bar or chocolate chips (Lily's chocolate chips use stevia & erythritol)

Preparation

  1. Mix your flaxseed meal with water and place in the fridge to set for 5-10 minutes

  2. Combine your wet ingredients in a bowl, and add your flax egg when it’s ready

  3. Then add dry ingredients into the wet bowl to form your batter

  4. Place your brownie batter in a lined 8x8 baking dish and bake for 35 minutes at 325°F

  5. Melt half of a vegan chocolate bar or 1/2 cup vegan chocolate chips in a bowl in 30-second increments in the microwave. Once the brownies have fully cooled, drizzle on top.
