No Frills Chocolate Chip Cookies

Ingredients

  • 1/4 cup coconut oil
  • 1 flax egg (1 tbsp flax + 4 tbsp water) or real egg
  • 1/2 cup coconut sugar
  • brown sugar (optional alternative)
  • 1 1/4 cup almond flour
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 cup vegan chocolate chips
  • Pinch of sea salt

Preparation

  1. Preheat oven to 350°F

  2. Mix flax egg or real egg and coconut oil in a large bowl, then stir in coconut sugar until well combined.

  3. Add almond flour, vanilla extract, and baking powder, and mix well.

  4. Fold in vegan chocolate chips.

  5. Using a mini ice cream scooper or spoon, transfer the dough to a lined baking sheet.

  6. Press each cookie down with a fork and sprinkle with sea salt.

  7. Bake at 350°F for 11 minutes.
