No Frills Chocolate Chip Cookies
Ingredients
- 1/4 cup coconut oil
- 1 flax egg (1 tbsp flax + 4 tbsp water) or real egg
- 1/2 cup coconut sugar
- brown sugar (optional alternative)
- 1 1/4 cup almond flour
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 cup vegan chocolate chips
- Pinch of sea salt
Preparation
Preheat oven to 350°F
Mix flax egg or real egg and coconut oil in a large bowl, then stir in coconut sugar until well combined.
Add almond flour, vanilla extract, and baking powder, and mix well.
Fold in vegan chocolate chips.
Using a mini ice cream scooper or spoon, transfer the dough to a lined baking sheet.
Press each cookie down with a fork and sprinkle with sea salt.
Bake at 350°F for 11 minutes.
