Brownie Batter Cookies

Ingredients

  • brownie batter cookies:
  • 1 tbsp flax meal
  • 4 tbsp water
  • 1/4 cup coconut oil
  • 2 tbsp tahini (or any nut butter)
  • 1/3 cup coconut sugar
  • 3/4 cup almond flour
  • 1/2 cup raw cacao powder
  • 1 tbsp reishi powder
  • 1/4 cup vegan chocolate chips
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • shredded coconut & pink sea salt to sprinkle

Preparation

  1. In a large bowl, add flax and water, stir and let sit for 5 minutes

  2. Add coconut oil and tahini and mix until creamy

  3. Stir in coconut sugar, almond flour, cacao powder, and reishi, until all dry ingredients are fully absorbed

  4. Fold in chocolate chips and baking soda and powder

  5. Spoon onto a lined baking sheet

  6. Sprinkle with coconut and pink sea salt and bake at 350 for 15 minutes

  7. Enjoy
