Banana Oat Breakfast Cookies

Ingredients

  • 1 cup gluten free rolled oats
  • 1/2 cup almond flour
  • 1 tbsp flax meal
  • 1/4 cup almond milk
  • 2 tbsp nut butter
  • 1 tbsp maple syrup (optional)
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • handful vegan chocolate chips

Preparation

  1. Mash banana in a large bowl

  2. Add almond milk, nut butter, flax meal

  3. Let sit for 2-3 minutes

  4. Add maple, oats, flour, baking powder, cinnamon

  5. Fold in chocolate chips

  6. Spoon onto a lined or oiled baking sheet and bake at 350 for 11-13 minutes

  7. Enjoy for breakfast, a snack, pre or post workout
