Homemade Vegan Chocolate Chip Cookies
Ingredients
- 1/2 cup coconut oil (solid not melted)
- 2 tsp vanilla extract
- 1/4 cup full fat coconut milk in a can
- 1 banana, mashed (the riper the better)
- 1 1/4 cups coconut sugar
- 2 1/4 cups all purpose GF flour
- 1 tsp baking soda
- 1/2 tsp sea salt
- 2 cups vegan chocolate chips
Preparation
Preheat oven to 190°C (375°F). Line a baking tray with baking paper or use reusable silicon sheets if available.
Mix together wet ingredients first, then dry ingredients in separate bowls.
Combine together and mix until well combined, then fold in the chocolate chips.
Once dough is ready, chill it in freezer for 10-20 minutes, then place cookies on a sheet with space between them and bake for 10-20 minutes or until light golden brown.
Once done, remove from oven and let cool on tray for 10 minutes, then enjoy.
