Chocolate Chip and Caramelised Pecan Banana Bread

Ingredients

  • 3 large very ripe bananas
  • 100g caster sugar
  • 80ml coconut oil, melted
  • 150g flour
  • 50g ground almonds (or sub more flour)
  • 100g dark chocolate chopped into big chunks
  • 1 flax egg
  • 1 tsp baking soda
  • 1 tsp baking powder

Caramelised pecans

  • 50g pecans
  • 1 1/2 tbsp maple syrup

Preparation

  1. Preheat the oven to 190°C.

  2. Begin by caramelising the pecans, toss them in maple syrup and then bake in the oven for 10 minutes, keeping an eye to avoid burning.

  3. Once the pecans are ready, cool them in the fridge.

  4. In a large mixing bowl, add bananas and mash them.

  5. Then add sugar and coconut oil, and mix well.

  6. Add in the flax egg and mix some more.

  7. Then add in the chocolate and pecans.

  8. Combine the dry ingredients and gently stir them into the wet mixture.

  9. Line a loaf tin with parchment paper and pour in the mixture.

  10. Flatten the top and bake in the oven for 45-50 minutes until just cooked.
