Gluten-Free Lemon Poppyseed Mug Cake

Ingredients

  • 2 tbsp coconut flour
  • 2 tbsp almond flour
  • 1/2 tsp baking powder
  • 1 egg
  • 1 tbsp coconut oil, melted
  • 1 tbsp almond milk
  • 1/2 tsp lemon zest
  • fresh juice from 1/4 lemon
  • 1.5 tsp poppyseeds

Preparation

  1. Mix all ingredients together until fully combined.

  2. Microwave for 1 minute.

  3. Top with a mixture of coconut butter and maple syrup for a fun glaze.
