Cinnamon Breakfast Mug Cake

Ingredients

  • 1 egg
  • 2 tbsp coconut flour
  • 1 tbsp coconut sugar
  • 2 tbsp almond milk
  • 1/2 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tbsp coconut oil

Icing

  • 1/2 tbsp coconut butter
  • 1/2 tbsp almond butter
  • 1/2 tsp coconut sugar

Preparation

  1. In a bowl, whisk 1 egg.

  2. Add 2 tbsp coconut flour, 1 tbsp coconut sugar, 2 tbsp almond milk, 1/2 tsp vanilla, 1 tsp cinnamon, 1/2 tsp baking powder, and 1/2 tbsp melted coconut oil.

  3. Mix all ingredients together.

  4. Pour the mixture into a small ramekin.

  5. Microwave for 2 minutes.

  6. For the icing, mix 1/2 tbsp coconut butter, 1/2 tbsp almond butter, and 1/2 tsp coconut sugar together.

  7. Microwave the icing for 10 seconds to make it thinner.

  8. Spread the icing on top of the mug cake.

  9. Note: Adjust the amount of coconut sugar in the cake if you prefer it less sweet, as initially less was used but found not sweet enough.
