Cinnamon Breakfast Mug Cake
Ingredients
- 1 egg
- 2 tbsp coconut flour
- 1 tbsp coconut sugar
- 2 tbsp almond milk
- 1/2 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/2 tbsp coconut oil
Icing
- 1/2 tbsp coconut butter
- 1/2 tbsp almond butter
- 1/2 tsp coconut sugar
Preparation
In a bowl, whisk 1 egg.
Add 2 tbsp coconut flour, 1 tbsp coconut sugar, 2 tbsp almond milk, 1/2 tsp vanilla, 1 tsp cinnamon, 1/2 tsp baking powder, and 1/2 tbsp melted coconut oil.
Mix all ingredients together.
Pour the mixture into a small ramekin.
Microwave for 2 minutes.
For the icing, mix 1/2 tbsp coconut butter, 1/2 tbsp almond butter, and 1/2 tsp coconut sugar together.
Microwave the icing for 10 seconds to make it thinner.
Spread the icing on top of the mug cake.
Note: Adjust the amount of coconut sugar in the cake if you prefer it less sweet, as initially less was used but found not sweet enough.
