Easy Pumpkin Pancakes with Spices
Ingredients
- 1 egg
- 1 tbsp. honey or pure maple syrup
- 3 tbsp. pumpkin puree
- 2 tbsp. almond milk
- 1/4 tsp. baking powder
- 3 tbsp. almond flour
- 1 tbsp. coconut flour
- 1 tsp. pumpkin pie spice or cinnamon
Preparation
Stir all ingredients together.
Cook the mixture on low-medium heat to make pancakes.
Top with cinnamon vanilla bean cashew butter and fresh figs, or similar toppings as desired.
Mug cake option
For mug cake variation, omit the almond milk.
Stir the remaining ingredients in a microwaveable mug.
Microwave for 2 minutes.
