Chewy Pumpkin Cookies with Oat Flour and Honey
Ingredients
- 1 1/2 cups oat flour
- 1 tsp pumpkin pie spice or cinnamon
- 1 tsp baking powder
- 1/2 cup pumpkin purée
- 1 egg
- 1/4 cup honey or pure maple syrup
- white chocolate chips
Preparation
Preheat oven to 350F and spray or line a baking sheet.
In a large bowl, whisk together the dry ingredients and in a small bowl, whisk together the wet ingredients.
Pour the wet ingredients into the dry and stir until everything is well combined.
Allow the batter to sit for 5 minutes to thicken, then use two spoons or an ice-cream scoop to make 10 cookies on the baking sheet.
Top with white chocolate and bake for 8 minutes.
