Chewy Pumpkin Cookies with Oat Flour and Honey

Ingredients

  • 1 1/2 cups oat flour
  • 1 tsp pumpkin pie spice or cinnamon
  • 1 tsp baking powder
  • 1/2 cup pumpkin purée
  • 1 egg
  • 1/4 cup honey or pure maple syrup
  • white chocolate chips

Preparation

  1. Preheat oven to 350F and spray or line a baking sheet.

  2. In a large bowl, whisk together the dry ingredients and in a small bowl, whisk together the wet ingredients.

  3. Pour the wet ingredients into the dry and stir until everything is well combined.

  4. Allow the batter to sit for 5 minutes to thicken, then use two spoons or an ice-cream scoop to make 10 cookies on the baking sheet.

  5. Top with white chocolate and bake for 8 minutes.
