Pecan and Cranberry Scones

Ingredients

  • 1 c oat flour
  • 1 c regular flour
  • 3 tsp coconut oil
  • 1 tsp baking powder
  • 1 big tbsp honey
  • 1/2 tsp vanilla
  • 1/2 c oatmilk
  • 1 small egg
  • cardamom
  • cinnamon
  • cranberries
  • pecan nuts

Preparation

  1. Preheat the oven to 190°C or 375°F

  2. Melt the coconut oil

  3. Mix the dry and wet ingredients and add the chopped pecans and cranberries

  4. If the dough is too wet, add a bit more flour

  5. Shape the dough into a ball and flatten it on a baking sheet using your palm

  6. Cut into 6 pieces

  7. Bake at 190°C/375°F for 18-22 minutes and let cool
