Carrot Date Bread with Rawnola

Ingredients

  • about 1 cup rawnola
  • 2/3 cup oat flour
  • 2/3 cup oatmilk
  • 1 tbsp nut butter
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 grated carrot
  • 1 egg

Rawnola

  • 8 big dates
  • 1/2 cup oats
  • 1/2 cup walnuts
  • 1/3 cup shredded coconut
  • cinnamon and cardamom
  • 2 tbsp flax meal
  • 1 tbsp honey

Preparation

  1. Make the rawnola in a food processor using its ingredients.

  2. Add the rest of the date bread ingredients except carrot and pulse until evenly mixed.

  3. Add the grated carrot and pulse a couple of times.

  4. Bake at 190°C for about 35-45 minutes and let cool.
