Pumpkin Snickerdoodles with Cinnamon Sugar Flavor
Ingredients
- 2 cups all purpose flour
- 2 eggs
- 2/3 cup brown sugar
- 1/2 cup coconut oil, melted
- 1/3 cup pumpkin purée
- 2 tsp pumpkin pie spice
- 1 tsp baking powder
- 1 tsp vanilla extract
Preparation
Whisk together eggs and sugar, then add coconut oil, vanilla and pumpkin purée and whisk until smooth
In a separate bowl, combine flour, pumpkin spice and baking powder. Slowly add dry ingredients into wet until thoroughly combined
Cover and place in fridge for 1 hour. Make into 24-28 balls, roll in mixture of 2 tbsp sugar+1 tsp pumpkin pie spice
Bake on a parchment paper lined baking sheet at 350 degrees for 9-11 minutes (makes two batches of 12-14 cookies)
