Pumpkin Snickerdoodles with Cinnamon Sugar Flavor

Ingredients

  • 2 cups all purpose flour
  • 2 eggs
  • 2/3 cup brown sugar
  • 1/2 cup coconut oil, melted
  • 1/3 cup pumpkin purée
  • 2 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Preparation

  1. Whisk together eggs and sugar, then add coconut oil, vanilla and pumpkin purée and whisk until smooth

  2. In a separate bowl, combine flour, pumpkin spice and baking powder. Slowly add dry ingredients into wet until thoroughly combined

  3. Cover and place in fridge for 1 hour. Make into 24-28 balls, roll in mixture of 2 tbsp sugar+1 tsp pumpkin pie spice

  4. Bake on a parchment paper lined baking sheet at 350 degrees for 9-11 minutes (makes two batches of 12-14 cookies)
