Vegan Pumpkin Doughnuts
Ingredients
- 1 cup of flour
- 1/2 teaspoon of baking soda
- 1 teaspoon of baking powder
- pinch of salt
- 1/2 teaspoon of pumpkin pie spice
- 1/4 cup of maple syrup
- 1/2 cup of almond milk
- 1 teaspoon of vanilla extract
- 1/2 cup of pumpkin puree
Glaze
- 1 cup powdered sugar
- 2 tablespoons milk of choice
- 1/2 teaspoon of pumpkin pie spice or cinnamon
Preparation
Preheat oven to 350°F
In a bowl, mix together the dry ingredients: flour, baking soda, baking powder, salt, and pumpkin pie spice
In another bowl, combine the wet ingredients: maple syrup, almond milk, vanilla extract, and pumpkin puree
Gently mix the wet and dry ingredients until just combined, avoiding overmixing
Spoon the batter into a greased doughnut pan or shape into doughnuts
Bake for 10-15 minutes or until a toothpick comes out clean
While the doughnuts cool, prepare the glaze by mixing powdered sugar, milk of choice, and pumpkin pie spice or cinnamon
Dip the cooled doughnuts into the glaze and let set
