Vegan Vanilla Cupcakes

Ingredients

  • 1 1/2 cup almond milk
  • 1 tablespoon apple cider vinegar
  • 1/2 cup coconut oil
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup coconut oil
  • 2 cups of powdered sugar
  • 1 tsp vanilla extract
  • 2 tablespoons almond milk

Preparation

  1. Mix 1 1/2 cup of almond milk and 1 tablespoon apple cider vinegar. Let it sit for about 5-10 minutes

  2. Mix the rest of the wet ingredients with the almond/ apple cider vinegar combo

  3. Mix all dry ingredients

  4. Combine wet and dry ingredients and mix well

  5. Line a muffin pan with baking cups and pour the mixture

  6. Bake at 350 degrees for about 20 minutes. When they look super fluffy and round at the top, they’re ready. You can try sticking a toothpick in them to check
