Pumpkin and Chocolate Chip Banana Bread
Ingredients
- 3 small or 2 large ripe bananas
- 1 large egg
- 2/3 cup pumpkin purée
- 1 1/2 cup plain flour
- 25g butter
- 1/3 cup brown sugar
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp salt
- 100g chocolate chips
- 2 tbsp pumpkin pie spice
Preparation
Melt the butter and let it cool.
Preheat the oven to 180 degrees.
Mash the bananas.
Add the egg and mix until combined.
Mix in the cooled butter, vanilla extract, pumpkin purée, and brown sugar until smooth.
In a separate bowl, mix together flour, salt, pumpkin pie spice, baking soda, and baking powder.
Combine the dry and wet mixtures.
Fold in the chocolate chips.
Pour the mixture into a lined bread tin; use butter or spray oil if no liners are available.
Bake for 45-55 minutes or until a toothpick comes out clean.
Let it cool before enjoying.
