Homemade Almond Milk Pancakes

Ingredients

  • 2 eggs
  • 1 tbsp brown sugar
  • 1 and 1/2 cup all purpose flour
  • 1 tsp baking powder
  • 3/4 cup unsweetened almond milk
  • 1 tsp vanilla extract

Preparation

  1. In a bowl, whisk together eggs, brown sugar, almond milk, and vanilla extract until well combined

  2. In a separate bowl, mix all purpose flour and baking powder

  3. Combine the wet and dry mixtures, stirring gently until just blended; do not overmix

  4. Heat a non-stick skillet or griddle over medium heat and lightly grease if needed

  5. Pour about 1/4 cup of batter for each pancake; cook until bubbles form on the surface, then flip and cook until golden brown on the other side
