Homemade Almond Milk Pancakes
Ingredients
- 2 eggs
- 1 tbsp brown sugar
- 1 and 1/2 cup all purpose flour
- 1 tsp baking powder
- 3/4 cup unsweetened almond milk
- 1 tsp vanilla extract
Preparation
In a bowl, whisk together eggs, brown sugar, almond milk, and vanilla extract until well combined
In a separate bowl, mix all purpose flour and baking powder
Combine the wet and dry mixtures, stirring gently until just blended; do not overmix
Heat a non-stick skillet or griddle over medium heat and lightly grease if needed
Pour about 1/4 cup of batter for each pancake; cook until bubbles form on the surface, then flip and cook until golden brown on the other side
