Apple Cake with Minimal Fat and Sugar

Ingredients

  • 3 to 4 apples (Pink Lady recommended)
  • 3 eggs
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 tbsp olive oil
  • 1 1/3 cups plain flour
  • 1 teaspoon baking powder
  • 2 teaspoon ground cinnamon
  • pinch of salt

Topping

  • 1 tbsp brown sugar
  • 1/2 teaspoon cinnamon
  • 3 tbsp chopped hazelnuts

Preparation

  1. Preheat oven to 180C

  2. Peel the apples and cut into small pieces

  3. Mix the topping ingredients together and set aside

  4. In a large bowl whisk together the eggs and sugar, oil and vanilla till well combined and fluffy. This will take about 3 minutes.

  5. Put a fine sieve over the bowl and sieve in the flour, cinnamon and baking powder. Fold in but do not overmix. It’s ok if you still see little bits of flour at this point.

  6. Add the apples and using a spatula fold them in. Pour into a lined or oiled round baking dish

  7. Bake for around 30 minutes. It’s done when a knife comes out clean.

  8. Let it cool for about 15 minutes before removing from the baking dish

  9. Enjoy!
