Healthy Baked Vegan Apple Donuts
Ingredients
- 4-5 apples
- 1 cup whole wheat flour
- 1/2 cup date sugar
- 1 teaspoon baking powder
- A pinch of salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup + 2 tablespoons plant milk
- 1 flax egg
- 1 tablespoon melted vegan butter
- 1 teaspoon vanilla extract
- Optional: cinnamon and sugar mixture for rolling
Preparation
Mix all the dry ingredients together in a bowl.
Prepare the flax egg by mixing 1 tablespoon ground flax seeds with 3 tablespoons water, whisk together, and set aside for 10 minutes.
Prepare the apples by slicing them into thin slices with a hole in the middle and core removed.
You will need a donut pan or something similar; alternatively, use a muffin pan and create a hole to simulate donut shape.
Add the flax egg, plant milk, melted vegan butter, and vanilla extract to the dry ingredients and whisk until everything is well combined.
Dip the apple slices into the batter, ensuring they are well covered, and place them onto the donut pan. Alternatively, put some batter in the pan, add the slices, and cover with more batter.
Repeat the process for all slices and bake in a preheated oven at 180°C for about 10 minutes or until golden brown.
Optionally, roll the baked donuts in a cinnamon and sugar mixture.
