Baked Low FODMAP Fruit Oats
Ingredients
- 2 cups oats
- 1 tablespoon coconut sugar
- 1 teaspoon baking powder
- a dash of salt
- 2 tablespoons vegan dark chocolate chips
- cinnamon
- assorted berries
- 2 cups plant-based milk
- 1 tablespoon vegan butter or coconut butter
- 1 teaspoon vanilla extract
- 1 flax egg
- banana
Preparation
Preheat the oven to 180°C (350°F)
Combine 2 cups oats, a tablespoon of coconut sugar, 1 teaspoon baking powder, a dash of salt, 2 tablespoons vegan dark chocolate chips, cinnamon and assorted berries in a bowl.
In another bowl combine 2 cups plant-based milk, 1 tablespoon melted vegan or coconut butter, a teaspoon of vanilla extract and an egg substitute (such as a flax egg).
Whisk all this together.
Grease or line a baking pan and pour the oat mix into the container.
Layer a topping of berries and banana and then pour the liquid mixture over it all.
Bake for about 40 minutes and enjoy.
