Baked Low FODMAP Fruit Oats

Ingredients

  • 2 cups oats
  • 1 tablespoon coconut sugar
  • 1 teaspoon baking powder
  • a dash of salt
  • 2 tablespoons vegan dark chocolate chips
  • cinnamon
  • assorted berries
  • 2 cups plant-based milk
  • 1 tablespoon vegan butter or coconut butter
  • 1 teaspoon vanilla extract
  • 1 flax egg
  • banana

Preparation

  1. Preheat the oven to 180°C (350°F)

  2. Combine 2 cups oats, a tablespoon of coconut sugar, 1 teaspoon baking powder, a dash of salt, 2 tablespoons vegan dark chocolate chips, cinnamon and assorted berries in a bowl.

  3. In another bowl combine 2 cups plant-based milk, 1 tablespoon melted vegan or coconut butter, a teaspoon of vanilla extract and an egg substitute (such as a flax egg).

  4. Whisk all this together.

  5. Grease or line a baking pan and pour the oat mix into the container.

  6. Layer a topping of berries and banana and then pour the liquid mixture over it all.

  7. Bake for about 40 minutes and enjoy.
