Biscoff Banana Oat Breakfast Cookies
Ingredients
- 1/3 cup oats, blended
- 1/3 cup rolled or jumbo oats
- 1/2 banana, mashed
- cinnamon
- vanilla
- flax egg
- almond milk
- salt
- 1 tbsp biscoff, melted
- 1/2 tsp baking powder
- remaining banana, sliced
Preparation
Preheat the oven fan 180°C
Mix the ingredients together APART FROM the biscoff, baking powder and sliced banana, adding in just a dash of almond milk so the mixture comes together
Leave to sit for a few mins whilst it thickens
Once thick, add in a dash more mylk it necessary, along with the melted biscoff and baking powder
Spoon or scoop out onto a lined baking sheet (v sticky so use spoons)
Flatten down a bit with the back of a spoon and place a slice of banana on top of each one
Bake for 17 minutes
Remove from the oven and cool slightly before eating
