Biscoff Banana Oat Breakfast Cookies

Ingredients

  • 1/3 cup oats, blended
  • 1/3 cup rolled or jumbo oats
  • 1/2 banana, mashed
  • cinnamon
  • vanilla
  • flax egg
  • almond milk
  • salt
  • 1 tbsp biscoff, melted
  • 1/2 tsp baking powder
  • remaining banana, sliced

Preparation

  1. Preheat the oven fan 180°C

  2. Mix the ingredients together APART FROM the biscoff, baking powder and sliced banana, adding in just a dash of almond milk so the mixture comes together

  3. Leave to sit for a few mins whilst it thickens

  4. Once thick, add in a dash more mylk it necessary, along with the melted biscoff and baking powder

  5. Spoon or scoop out onto a lined baking sheet (v sticky so use spoons)

  6. Flatten down a bit with the back of a spoon and place a slice of banana on top of each one

  7. Bake for 17 minutes

  8. Remove from the oven and cool slightly before eating
